Nora's Vegan Soup from 2001 Oregon Coast Retreat

Oregon Coast Retreat, 2001 Vegan Soup

Ingredients:

1/4 cup olive oil (enough to just cover bottom of a stockpot)
Salt to taste
1 to 2 cups baked squash or pumpkin, cut into bite size pieces
1 bunch pre-washed fresh spinach
4 cloves garlic, chopped
1 small onion, chopped
2 tablespoons fresh parsley (optional)
2 tablespoons fresh oregano (optional)
1/2 bunch fresh cilantro
3 tablespoons freshly grated ginger
1/3 cup white wine
1 can garbanzo beans
3/4 cup cooked rice
water

Directions

Heat olive oil in bottom of pot; when it's hot lower to simmer and add chopped onion and garlic; saute until they just begin to brown. Add grated ginger. Add pumpkin and cook some more. When everything starts smelling flavorful, add 3-4 cups of water and 1/3 cup of white wine and salt to taste. Add garbanzo beans, then spinach. When the spinach melts, add the rice. Add water if it's too thick, and add salt to taste. Cook 20 minutes to a half hour.
